P’Noodles

Peanut butter, the ultimate kid-food, is also a protein powerhouse. These noodles are mild-flavored for young taste buds; for a bolder taste, add a dash of hot sesame oil, rice vinegar, grated ginger, or all three.

Makes 2 servings

Ingredients
1 (3-ounce) package ramen noodles
1/4 cup chunky peanut butter
2 tablespoons teriyaki sauce
2 tablespoons water
1/2 cup “julienne” or coarsely grated carrots
1/2 cup coarsely grated cucumber (or pea shoots)

Directions
1. Cook ramen noodles according to package directions, discarding seasoning packet.

2. Meanwhile, whisk together peanut butter, teriyaki sauce and water in bowl until combined and creamy.

3. Drain noodles and rinse briefly to cool; press out excess water.

4. Toss in bowl with carrots, cucumber and sauce.
